You sound like me (that might sound like a curse but I mean it in a good way!).
You do sound as if you genuinely want to stop and that's great. I think you're beginning to understand how deep and complex this problem is, though, as it can "get you" even when you know you don't want to do it. Which is confusing and frightening when you think you know your own mind and "should" be able to control yourself.
Do you have any support? Does anyone else know? I think you DO need to say it "out loud" as you say, and it massively helps if you say it to another person, someone who will support you. If there's someone close to you who you can get on board, I'd urge you to do that as soon as possible (people actually love to be asked for their help). If you're not ready to do that or there isn't anyone, maybe consider speaking to the Gamcare folk directly or another helpline. It's great to stay on the forum here but speaking to another person in real time can be really powerful.

You need to get blocks on all your devices to prevent your accessing gambling sites.
You can use K9 free and ask your wife to set the password and keep it secret.
Put as many barriers up to prevent gambling.
Self exclude from bookmakers in your area.
Give your wife charge of your finances.
When a CG has the urges then strong measures have to be in place so gambling cannot take place.
It's great that you are starting counselling.
